I don't know how it happened, but here we are. It's almost fall. The kids are back in school and the days are noticeably shorter. This summer just flew by for me. How about you?So, in keeping with the season, I have a quick and super easy raw applesauce recipe that's perfect for kids and uses just four ingredients. It also travels well in school lunches.
Many of the apple crops here in Michigan were damaged by the early spring and the harvest, usually around 25 million bushels, will be just 3 million bushels this year. It's the same elsewhere in the country, so apple prices are expected to go up this year.
When buying apples, look for plump, unblemished fruits that are firm and heavy, and avoid fruits that are bruised or otherwise damaged. Store these seasonal treasures in a cool place or in the refrigerator for up to one month.
ingredients
- 6 apples, peeled, cored and chopped ($5.00)
- 8 dates (soaked if necessary) ($.80)
- 1 tablespoon lemon juice ($.20)
- 1/2 teaspoon cinnamon
In a food processor fitted with an "S" blade, process all ingredients until mostly smooth and saucy. Let it go a little longer if you like smoother applesauce, and less if you're in the mood for chunky. That's it. Any leftovers will keep in the refrigerator for up to three days.
